Camping | Menu | Food | Breakfast | Dinner | Easy | Crockpot | Grill

Here's the menu for our first trip in "RV There Yet?". Cooking our meals was relatively easy with a little prep work completed at home before we left on our road trip including:

• pre-mixed sauce for chicken
• pre-mixed dry ingredients for pancakes
• pre-cooked meat mix for spaghetti

Additionally, the ribs and cornbread were leftovers from a home meal which I froze and brought along - all that was required was heating in the microwave!

Day 1

Dinner:

Eat out at Kinfolks Diner in Nacogdoches, Texas

Day 2

Breakfast:

Scrambled Egg with Bacon and Cheddar Panini

Dinner:

Foil Pack Asian Chicken with Fruit Salad (diced fresh fruit mixed with plain yogurt and coconut to taste)

Day 3

Breakfast:

Cinnamon Roll Pancakes

Dinner:

Slow Cooker Baked Spaghetti with Green Beans and Garlic Bread

Day 4

Breakfast:

Bacon, Egg and Cheese Breakfast Tacos

Dinner:

Grilled Crockpot Ribs with Cornbread and Baked Beans

Dry Rub Recipe: Mix 3/4 cup brown sugar, 2 tbsp. salt, 1 tbsp. chipotle chili powder, 1 tbsp. smoked paprika, 1 tbsp. garlic powder, 2 tsp. cumin, 1/2 tsp. cayenne, 1/2 tsp. thyme and 1/2 tsp. cinnamon
