Want some ideas for starting off your day on the right foot when you're traveling in your RV?

If you enjoy camping or RVing as much as we do, you are probably (like us) always on the lookout for quick and easy breakfast ideas. Good news! All nine of these entrees from our recent journey fit the bill, plus they taste great and are quite filling too.

These favorite breakfast entrees are easily prepared in your RV kitchen using your stove, oven and/or microwave. If you have a panini press, it's perfect for one of the recipes - but your broiler will work as well. When the temperature is nice, taking advantage of the great weather is easy - even without building a fire or having an outdoor kitchen. A griddle is perfect for outdoor cooking of many breakfast entrees!

Cooking breakfasts for RVers can be as simple or as complex as you want. We prefer simple, so if that's your goal too, check out these recipes and pick some to add to your breakfast rotation. You'll be glad you did!

Choosing our Favorites

When we are traveling with our RV, we typically don't relax much because we plan pretty full days. Getting started with a good breakfast is important. The combination of quick and filling allows us to skip lunch and explore as much of our surroundings as possible.

We frequently eat cereal (sometimes with fruit), as it's easy and we can each choose our favorite brand. But, it's nice to have something different.

To choose our favorites from our six week getaway, we eliminated our cereal days and debated about the rest. It was actually much harder to rank our breakfast entrees than our dinners and desserts. Every one of these was easy, quick and most important, yummy!

Here we go - our nine best breakfast entrees from our first trip of the year (ranked from number 9 to number 1). You'll find either links to our favorite recipes or written instructions that should be easy enough to follow. 9. Breakfast Sliders

After crisping pre-cooked bacon in the microwave, set it aside. Scramble eggs with some water, garlic powder and black pepper to taste. If desired, mix in some salt, chopped onions and/or bell peppers and cook the eggs in the microwave. Before the final 30 seconds of cooking, add sliced cheese on top to melt.

I actually cooked the eggs in a square microwave safe container. It worked perfectly because I could cut the "egg square" into 6 pieces. I placed the eggs and bacon on Hawaiian rolls toasted under the broiler and voila, breakfast sliders were ready to eat.

We paired these sliders with breakfast potatoes. After dicing a potato, I partially cooked it in the microwave. Then, I tossed the potato with some black pepper, onion and garlic powder. I heated a small amount of olive oil on the stove and finished cooking the potatoes until they were nicely browned.

8. Yogurt Parfaits

Talk about easy - this breakfast has to be one of the easiest of all, but still really good! Only three ingredients to gather and then it's a make your own breakfast. Start with a container of your favorite flavor of yogurt, add some granola and fresh (or defrosted frozen) fruit of your choice. No need to serve yogurt parfaits in a special dish - a paper bowl works fine. Just mix and eat.

If you desire something more filling, a yogurt parfait is easily paired with toast or a bagel.

7. Pancakes

We love having pancakes for breakfast - even if they take just a little more work. Boxed pancake mixes make for a good and easy breakfast, but I favor Homemade Pancakes. This recipe is so easy and tasty - especially when you add pecans to the batter. To make morning preparation even quicker, I often mix the dry ingredients in advance.

Last time we were in Hawaii, we bought several pouches of fun pancake mix flavors - Chocolate Macadamia Nut, Banana Macadamia Nut and Blueberry Açaí. If you find yourself in the islands, stop by a Walmart or other retailer and check them out! (Consider adding some chopped macadamia nuts to the mix along with the required water . . . and even some fresh fruit to top off your pancakes. You won't be disappointed!)

6. French Toast

This Quick and Easy French Toast recipe is just that - quick and easy. I love adding some berries, cool whip and syrup for an even more decadent breakfast.

5. Cinnamon Rolls / Blueberry Biscuits

I feel like I am cheating by putting these on our favorite breakfasts list, but . . . Oh well, we both enjoyed our meals. Cinnamon rolls come in a variety of flavors, and I love to add pecans for extra yumminess. I recently saw tubes of blueberry biscuits for sale, and they were a nice change of pace. Both are tubed perfection!

4. Pigs in a Blanket

We actually attended a pot-luck dinner and brought Pigs in a Blanket to share. We decided to buy extra ingredients so we'd have enough for a breakfast or two. Once baked, they save well in a ziplock bag and can be heated in the microwave for a fast meal.

3. Breakfast Quesadillas

After mixing eggs, water, chopped red peppers, crumbled bacon and onions with black pepper and garlic powder to taste, the real cooking began. I poured the egg mixture on the griddle and Scott used a spatula to keep mixing everything up until no longer runny. Just before the eggs were fully cooked, we heated four tortillas. To finish, we divided the egg mixture between two of the tortillas, sprinkled the eggs with shredded cheese and placed the remaining two tortillas on top. Slice the quesadillas into wedges and breakfast is ready.

Scott prefers his quesadillas to be served with salsa only. I like mine with avocado, sour cream and salsa. The possibilities are endless!

2. Breakfast Paninis

Since we prefer crispy bacon, my first step is to fully cook some pre-cooked bacon in the microwave. Next is preparing scrambled eggs by mixing eggs, water, diced onion and red/green bell peppers. After cooking the egg mixture on the stove, I divide them among two slices of bread and add bacon slices and cheese. I place the second slice of bread on top of each panini and heat them in our panini press for about 6 minutes. No panini press? No problem - just place them under your broiler and flip over after toasted.

I almost always leave home with a ziplock bag filled with frozen chopped onions and a second with chopped red and/or green bell peppers. Whenever I need these ingredients in a recipe, it's easy to add just the right amount.

1. Breakfast Tacos

Living in Texas, we love our breakfast tacos and can't survive 6 weeks without them! Making them is very similar to making breakfast quesadillas, except that we also add potatoes. Start by crisping pre-cooked bacon in the microwave while dicing a potato. Partially cook the diced potatoes in the microwave to soften them. Mix the eggs, water, crumbled bacon, chopped onion, diced potatoes and spices to taste. Cook on the griddle and heat tortillas just before the egg mixture is fully cooked. Scoop the eggs into the tortillas and add shredded cheese and salsa before devouring.
