15 Night RV Road Trip Menu with Recipes

Here's the third and final part of our menu (with recipes) for our fall RV trip. In addition to eating leftovers as we traveled, I made some of our favorites and tried some new recipes too. (Of our nearly eight weeks on the road, we stayed with or near family for two weeks and therefore we didn't cook or eat in our RV during those time periods.)

Day 1 Menu

Breakfast

Breakfast Quesadillas

We've regularly been making Breakfast Tacos while in our RV, but these Breakfast Quesadillas were a first. As they were equally easy, we'll be making them again - just to have something a little different. Although I didn't really follow the recipe, it did give me the inspiration to try a different version of a breakfast that we enjoy!

While Scott heated our griddle, I mixed together eggs, milk and black pepper. Before cooking, I added a little diced green pepper. With Scott manning the griddle, I heated a few strips of pre-cooked bacon in the microwave until crisp. When all of the ingredients were almost ready, two tortillas went on the griddle and we topped them with shredded cheese and the bacon, crumbled. After splitting the cooked egg mixture between the two tortillas, we placed a second tortilla on top of each. We then heated, flipped, cut and ate!

Eat out at McDonald's

Our day didn't go quite as planned, so we ended up eating out during our late night return. To make a long story short, we followed a sightseeing suggestion of some fellow travelers and ended up stuck in the mud. A very kind gentleman helped us out of our predicament, however the whole episode delayed our return to "RV There Yet?" by several hours. Because of this, we grabbed the easiest fast food that we could find!

Day 2 Menu

Although I try to avoid planning the easiest breakfast of all on a daily basis, sometimes it makes the menu every other day. It's just too easy for each of us to serve ourselves ... and throw all of the paper and plastic in the trash afterwards.

Dripping Roast Beef Sandwiches with Melted Pepper Jack and Tomato Basil Soup

As we moved to a new campground, I planned for an easy to prepare dinner. The Tomato Basil Soup was leftover from a previous meal so it just needed to be heated. I followed the Roast Beef Sandwich recipe as written - basically just heating some soup in which to soak the roast beef ... and the best news is that we had enough for another meal.

Day 3 Menu

Yogurt Parfaits

Another easy breakfast that we both enjoy is make our own Yogurt Parfaits. We had single serving flavored yogurt into which we added our preferred amount of granola, strawberries, blackberries and chopped pecans. Just like with cereal, our bowls, napkins and spoons can go straight to the trash after breakfast.

Slow Cooker Crack Chicken Pasta with Side Salad and Garlic Bread

As the Crack Chicken Pasta was leftovers that just needed to be reheated in the microwave, I sliced and buttered a partial loaf of bread (enough for leftovers too). After sprinkling the buttered bread with garlic powder, it was ready to go under the broiler for a few minutes. For our salad, I tore iceberg lettuce, sliced some grapes in half and chopped a tomato and half of an avocado. I mixed the ingredients together and topped the salads with crumbled feta and sunflower seeds. We each added salad dressing and started eating while the bread was toasting and the pasta reheating.

Day 4 Menu

Carmelized Onion & Gouda Charbroiled Chicken Burgers with Macaroni & Cheese and Fruit Salad

Another easy meal - the only prep work was making fruit salad. I sliced a banana and some grapes and cut an orange and kiwi into bite-sized pieces. After adding sour cream and coconut to taste, one side dish was ready. The mac 'n cheese just needed to be reheated, as did the purchased chicken patties. Once the chicken was hot, I cut each patty in half for a better fit on the rolls, added pepper jack cheese and placed them under the broiler to toast the bread and melt the cheese. I topped each sandwich with tomato slices and lettuce, and dinner was ready.

Day 5 Menu

Pecan Pancakes

Because I don't like buttermilk pancakes, Scott puts up with my desire to always make some kind of modification. This time, I followed the directions on the pancake mix and added chopped pecans. Scott did the pouring, cooking and flipping. We made a double recipe, so we have leftover Pecan Pancakes for another breakfast.

Crockpot Ribs with Baked French Fries

Since it had been over two weeks since we last had ribs, we decided to make another batch. As I had combined the ingredients for our favorite dry rub before we left home, making the Crockpot Ribs was super easy. (To make the Dry Rub that we like: Combine 3/4 cup brown sugar, 2 tbsp. salt, 1 tbsp. chipotle chili powder, 1 tbsp. smoked paprika, 1 tbsp. garlic powder, 2 tsp. cumin, 1/2 tsp. cayenne, 1/2 tsp. thyme and 1/2 tsp. cinnamon. Mix well, and if you plan to store some for the future, use a zip lock bag or air tight container.)

As always, I start by lining my crockpot and then cut the rack of ribs into sections that will fit inside. Before placing the ribs in the crockpot, I rub both sides with dry rub, place the section in the crockpot and cover the top with barbecue sauce. After repeating until all ribs are in the crockpot, I turn it on low. About eight hours later and just before dinner time, I either place the ribs under a broiler or on a grill for a few minutes to caramelize the sauce.

While I usually use russet potatoes to make Baked French Fries, I had red potatoes on hand so I sliced them into strips. I then tossed the potatoes with the oil and spices and placed them on a foil covered baking sheet. Into the oven they went so that they would be cooked just before the ribs went under the broiler to caramelize.

Dripping Roast Beef Sandwiches with Melted Pepper Jack, Macaroni & Cheese and BBQ Potato Chips

Following another day of moving campgrounds, our dinner was mostly leftovers - just paired differently than before. After heating the roast beef and mac 'n cheese in the microwave, I placed the beef and pepper jack on two submarine rolls. Under the broiler they went until the cheese was melted and the rolls toasted. We each added au jus and peppers to taste, and grabbed a handful of potato chips from the bag!

It had been a couple of weeks since we had one of our breakfast favorites, so today was the day for a repeat performance. While Scott heated the griddle, I diced a couple of red potatoes and mixed them with pre-bought bacon crumbles. As he began cooking that mixture on the griddle, I mixed eggs with water, diced onions and green peppers and added black pepper to taste. When the potatoes were mostly cooked, we added the egg mixture and cooked it all together until the eggs were no longer runny. After warming flour tortillas, we filled our Breakfast Tacos with scrambled eggs and topped them with shredded cheese and salsa.

Spaghetti and Meatballs with Side Salad and Garlic Bread

With frozen meatballs, Spaghetti and Meatballs is an easy to prepare dinner. While the water was heating, I made a salad by tearing iceberg lettuce, slicing grapes, chopping a tomato and half of an avocado and mixing in crumbled feta and sunflower seeds. When the spaghetti was boiling, I reheated the Garlic Bread and defrosted the meatballs. After draining the pasta, I added meatballs and spaghetti sauce and heated it on the stove in the same pot for a few more minutes.

Grilled Chicken Nachos Supreme

I filled a foil covered baking sheet with tortilla chips spread with refried beans. Since we had leftover grilled chicken breast, I diced it and distributed it on the chips as evenly as possible. After sprinkling shredded cheese across the top, the tray went in the oven for about 10 - 12 minutes. While the nachos were baking, I chopped a tomato, avocado and onion and opened a can of sliced black olives and a container of sour cream. We each topped our own plates of Grilled Chicken Nachos Supreme and we were ready to eat!

Day 9 Menu

Shrimp and Mushroom Pesto Pasta with Dinner Salad and Garlic Bread

As we were planning to eat out with my family for the next week, my goal was to use up all of the fresh ingredients that we still had. Fortunately, I was able to find enough to make a salad to accompany our leftover Shrimp and Mushroom Pesto Pasta and Garlic Bread. (To make the original dish, I boiled the pasta and after draining most of the water, I added shrimp, fresh sliced mushrooms and pesto into the pot and let it heat for a few minutes.)

Day 10 Menu

Breakfast Tacos

Before our drive to move "RV There Yet?" to a new campground for the upcoming week, we heated some tortillas wrapped in a damp paper towel and reheated the Breakfast Taco mixture from a few days ago. We each added shredded cheese and salsa, gobbled down our tacos and we were off to Phoenix.

Although I am posting this menu as if it were from 15 consecutive days, the first 9 days plus breakfast on Day 10 was our pre-Phoenix menu. Beginning with our Day 10 dinner, the recipes and menus are post-Phoenix.

"Bollo Pasta" leftovers from Oregano's Pizza Bistro

We each left a dinner at Oregano's, one of our favorite restaurants in the Phoenix area, with plenty of leftovers for a second meal. After a full day of driving from Arizona to Texas, the leftovers were a perfect dinner as all that was required prior to eating was the power of our microwave.

Leftovers from Chinese Restaurant

On one of our last nights in Phoenix, we took my Mom to dinner at a local Chinese restaurant and we ordered too much food! Since we spent the full day hiking in the park, leftovers again made for a perfect dinner - just heat and serve.

Snickerdoodle Cookie Bars

I was getting antsy since I hadn't cooked in so long (ha ha), so I baked a batch of Snickerdoodle Cookie Bars. While at home, I usually bake from scratch, but when in our RV, I often use prepackaged mixes. I followed the recipe as written for cookie bars, and although they took longer to bake with our oven heat shield trick, they didn't burn!

Day 12 Menu

Breakfast

Eat out at Chick-Fil-a

We had some rewards expiring soon in our Chick-fil-a One apps, so we headed to the restaurant for an inexpensive breakfast.

Crockpot Ribs with Macaroni and Cheese, Fruit Salad and Cornbread Muffins

All leftovers that just needed to be reheated in the microwave - except for the fruit salad. (You can definitely tell that our eight weeks away in "RV There Yet?" is coming to an end.) For the fruit salad, I cut up a banana, green apple and orange and mixed the fruit with sour cream and coconut to taste.

Slow Cooker Crack Chicken Pasta with Side Salad and Garlic Bread

For our salads, I added chopped avocado and tomato to some torn iceberg lettuce, shredded cheese and sunflower seeds. I got fancier with tonight's Garlic Bread by adding some shredded mozzarella on top of the garlic powder covered buttered bread. While the Crack Chicken Pasta was being heated in the microwave, the bread was under the broiler.

Day 14 Menu

Cinnamon Rolls

Although not the healthiest of breakfasts, Cinnamon Rolls are a fun treat. I separated and placed the store bought tube of cinnamon rolls on a foil covered square baking pan. Once they were out of the oven, I iced them and breakfast was ready.

Grilled Chicken Nachos Supreme

It was college football Saturday again, so I followed the dinner recipe from Day 8 to a tee except for substituting green onions in place of white.

Easy Grilled Tilapia with Mexicorn and Side Salad

Other than eliminating the salt, I followed the Tilapia recipe as written. With the fish in the oven and the corn in the microwave, I made a salad by combining torn iceberg lettuce with chopped tomato and avocado. Before topping the salads with shredded cheese, sunflower seeds and salad dressing, I tossed in some cut up orange slices as well.
