Here's part two of our menu for our nearly eight week fall westbound RV trip. If you missed part one which encompassed our first nine days on the road, take a look at 9 Night Fall RV Camping Road Trip Menu. You'll see that we ate some leftovers as we continued traveling down the road, but that's not all we ate! I tried some new recipes plus made some of our favorites as well.
If you are in search of ideas for an upcoming RV or camping trip (or even some ideas for meals at home), take a look at this post. You'll find that all of the meals / recipes are fairly easy, and there is a variety of menu items in the two week meal plan. Oh, and we did eat out a few times during this two week period as well - but we had good reasons each time!
Snacks / Desserts
We still had some Crockpot Candy that I made early on in the trip, so we continued to enjoy one of our favorites for dessert and traveling snacks. I had modified the recipe ever so slightly by substituting Halloween themed m&m's and sprinkles, so the candy was perfect for the time of year!

Day 1 Menu
Breakfast
Cinnamon Applesauce PancakesSince I'm not a big fan of buttermilk pancakes, I always try to do something to dress our pancakes up and make them just a little bit different. I found this super easy recipe for Cinnamon Applesauce Pancakes, so I gave it a try. The applesauce that I had brought along was not cinnamon applesauce, so I added a little extra ground cinnamon to try to make up for it. The pancakes were good, however I do think that the cinnamon applesauce would make them even more flavorful.

Shrimp and Mushroom Pesto Pasta with Cucumber Salad and Garlic-Parmesan Pull-Apart LoavesI made another serving of Cucumber Salad early in the day by mixing equal amounts of sugar, water and vinegar so that I had enough for our cucumber slices to soak in. After letting the cucumber soak for the better part of the day, I made a quick pasta dish along with some garlic bread. For our Shrimp and Mushroom Pesto Pasta, after boiling and draining most of the pasta water, I added some shrimp, fresh sliced mushrooms and pesto into the boiling pot.
While the pasta was heating, the bread went into the oven. I had used part of a can of biscuits a couple of days earlier (for dumplings), so I made a partial recipe of one of our favorite bread recipes, Garlic-Parmesan Pull-Apart Loaves. The only bad thing about a partial batch is that we had no leftovers!

CerealOur go to breakfast - that I try not to plan for too many consecutive days in a row, but it's so easy! Plus, with paper bowls, clean-up can't be easier since everything can go right in the trash can!

Eat out at Martin's Capitol Cafe in Roswell, New Mexico
I'm a huge fan of Mexican food, and while we were in New Mexico I really wanted to try some New Mexican food so that I could compare it to the Tex-Mex that we eat at home. Martin's Capitol Cafe came highly recommended, and it was close by the RV park that we called our home for several nights, so we gave it a try. The flavors were definitely unique, and Scott and I both enjoyed our dinners.
Day 3 Menu
Breakfast
Breakfast TacosWhen we made Breakfast Tacos a few days earlier, I purposely made more than we could eat in one meal so we'd have some easy leftovers. In addition to reheating the egg mixture in the microwave, I heated some flour tortillas wrapped in a damp paper paper towel for about 45 seconds. Once all was hot, we topped our tacos with shredded cheese and salsa for an easy but good morning meal.

Garlic Parmesan Tilapia with Knorr Herb & Butter Sides and Cucumber SaladI had brought along 6 frozen tilapia filets, and found this recipe for Garlic Parmesan Tilipia. The recipe was quick, very easy and definitely a keeper. I only made 4 of the filets, so we have leftovers for another meal - but I almost wish I had made all 6 since we liked the flavor. The Cucumber Salad was leftover from two days earlier, and I cooked the Herb & Butter Rice Sides while the fish was in the oven.
Dessert
Lemon PuddingTo give us a little variety (and as my attempt at complementing the lemon in the tilapia dish), I made Lemon Pudding for dessert. Although still pretty easy, I accidentally bought regular pudding rather than instant - so make sure to look carefully so you purchase what you actually want!

Day 4 Menu
Breakfast
Yogurt ParfaitsIt had been a while since we had one of our regular breakfasts - make your own Yogurt Parfaits. We started with single serving flavored yogurt and added granola, strawberries and blackberries, plus some chopped pecans. As the fruit was frozen, I just defrosted enough for our two parfaits in the microwave for less than a minute each.

Pork Ribs with Baked Beans and Macaroni & CheeseAs we were moving to a new campground, I wanted an easy dinner, so leftovers it was - well mostly at least! While making a package of macaroni & cheese on the stove, the ribs and beans went into the microwave to be reheated.

Egg Salad Sliders with Simple Crock Pot Chicken and DumplingsWe had enough leftover Chicken and Dumplings for a side dish, but not enough for a meal, so I decided to supplement them with some Egg Salad Sliders. Since I had boiled some extra eggs when preparing a previous dinner, all that I had to do to prepare was mash the eggs, add some salad dressing (or mayonnaise) and season with some green onion and black pepper to taste. I toasted 6 King's Hawaiian Rolls under the broiler and spread the filling on the sandwiches while reheating the chicken and dumplings in the microwave.

Quick and Easy French ToastWe enjoyed this French Toast recipe during a previous road trip, so I decided to make it again. It's really easy (especially when served with store bought syrup) - just make sure that your bread is not fresh! (I actually doubled the recipe, and we froze two slices for a future breakfast.)

Eat out at ABQ Balloon FiestaOur evening was spent at the Special Shape Glowdeo and we both decided to taste test one of the award winning dishes - BBQ Macaroni & Cheese.
Day 7 Menu

Eat out at ABQ Balloon FiestaWhile roaming around last evening, we learned that Breakfast Burritos were introduced over 30 years ago at the Ballon Fiesta. With that information, I immediately knew what my breakfast plan was for this morning. (Plus, we didn't get back to our RV until nearly 11:00 PM, and left before 4:00 AM to see the Dawn Patrol and Mass Ascension.)
Dinner
Nachos SupremeFor college football Saturday (we are Texas Longhorn football fans), Nachos Supreme seemed perfect for dinner, and easy too! After filling a foil lined baking sheet with tortilla chips, I topped each with the prepared meat mix that I brought along for Oven Tacos plus shredded cheese. (I find that the recipe yields enough for 24 tacos, so I typically freeze enough of the meat and refried bean mixture for 6 tacos in ziplock bags. I often use ground turkey in place of beef and we can't tell any difference.)
While the chips were baking, I chopped some green onions, tomatoes and an avocado. We each topped our own nachos with the diced ingredients along with some sliced black olives and sour cream.

Slow Cooker Crack Chicken Pasta with Fruit SaladI was looking forward to eating some of the leftovers of the Crack Chicken Pasta that I made earlier in our road trip. (Other than using rotini, I followed the recipe as written and we both liked it.) To accompany the dish, I made a quick Fruit Salad with a banana, apple, orange and some grapes. Once cut into bite sized pieces, I mixed the fruit with some sour cream and coconut to taste for a super easy but delicious side dish.

Eat out at Chick-Fil-aAs we were away from our RV for most of the day, we took advantage of the time away to do some grocery shopping. Rather than cook upon our return, we chowed down on free chicken sandwiches that we had earned through the Chick-fil-a One app.

Cinnamon Applesauce Pancakes & Cheesecake Pancakes with Berry-Lemon SyrupI coupled the Cinnamon Applesauce Pancakes leftover from earlier in this trip along with some Cheesecake Pancakes frozen after a previous trip for today's breakfast. The leftover Warm Berry Syrup was perfect to pour over both pancake flavors.

Meatball Sliders with Baked Beans and Macaroni & CheeseAs we moved "RV There Yet?" from one campground to another today, I wanted a really easy dinner. With less than a week left before visiting my family in Phoenix (where I knew we would eat out each night), I wanted to start getting rid of some leftovers. All I had to do for dinner tonight was defrost some meatballs. While I heated the baked beans, macaroni & cheese and meatballs (sliced in half) covered in pasta sauce in the microwave, I toasted the sliced King's Hawaiian Rolls under the broiler. After placing the meatballs on the rolls, dinner was ready to be served.

Shrimp and Mushroom Pesto Pasta with Dinner Salad and Garlic BreadSince the leftover pasta just needed to be reheated, all I did for tonight's dinner was make some garlic bread and a salad. After slicing the bread, I buttered it and sprinkled garlic powder on top. While it was toasting under the broiler, I tore up some iceberg lettuce, sliced a tomato and some grapes and topped the salads off with sunflower seeds. Within a few minutes, our meal was ready to serve and eat.

Cinnamon RollsWe don't do this often, but Cinnamon Rolls are a nice breakfast treat. I covered a square baking pan with foil and separated and placed the store bought tube of cinnamon rolls on the foil. After baking them, I iced them and our yummy (albeit slightly burnt on the bottom) breakfast was ready.

Apple Pie Crumb Bars with Vanilla Ice CreamAlthough changing campgrounds today did require a drive, I had been dreaming about baking (or eating) Apple Pie Crumb Bars for over a week, so tonight was finally the night. Following the recipe was oh so easy, and the end result was very tasty - especially when warm and served with vanilla ice cream. I will definitely make these again. (After my less than positive cinnamon roll experience, Scott did a little research on how to avoid burning foods in the RV gas oven. The best solution that he came up with was to reduce the amount of heat from the flame directly on the baking pan. In order to do this we raised the shelf to the highest position and placed a cookie sheet as a heat shield directly above the broiler shelf. It seems to be the perfect solution, although the cooking time definitely needs to be increased for most dishes.)

Frito Pie with Cornbread MuffinsI prepared the cornbread as directed on the package mix and decided to bake both our Frito Pie and Cornbread Muffins in the same muffin pan. After spraying the pan with non-stick cooking spray and filling 6 spaces with the cornbread, I began on our main course. I filled the remaining spaces just over half full with Fritos. I then topped each with canned chili, diced onions and shredded cheese. I followed the directions for the muffins, and when they were ready to eat, so was the Frito Pie!

Tuna Salad Sliders with Tomato Basil SoupSince I had my plan for dinner early in the day, I made tuna salad by mixing a drained can of tuna, salad dressing, chopped green onions and black pepper immediately following our breakfast. While reheating the Tomato Basil Soup on the stove, I toasted 6 sliced King's Hawaiian Rolls under the broiler. Once all were toasted, we were ready to eat after spreading the chilled tuna salad on the rolls.
