Unexpected Results from 3 Week RV Camping Menu (Part 1)

Beginning our three week camping adventure, we wanted a plan for yummy camping meals! Since we usually spend our days exploring the world, I tend to plan quick RV meals. I'm regularly on the look-out for RV breakfast ideas and often try out slow cooker recipes for easy RV dinners. We are both fans of leftovers which make a second meal even easier, so I almost always cook enough to freeze. Read on to get ideas for planning your next RV adventure ... and to read about our unexpected results!

Day 1 Menu

Slow Cooker Gumbo over Rice with Cornbread

Since I knew that we would spend most of our first day on the road (literally), I planned for a very easy dinner. Leftovers it was! I followed the recipe as written for the Slow Cooker Gumbo during a previous RV trip and froze the leftovers.

Rather than baking the cornbread in a skillet, I use a 9" x 13" glass baking dish. I then freeze meal size servings of the cornbread (wrapped in plastic wrap and foil) in zipper bags. After a quick trip to the microwave, dinner is ready.

Day 2 Menu

Yogurt Parfaits

One of our "go to" breakfasts is Make Your Own Yogurt Parfaits. We can each choose from a selection of flavored yogurts and add fruit and granola. Rather than layering in true parfait style, we just mix and devour!

This Slow Cooker Thai Peanut Chicken recipe was easy to follow and the results tasted great. Plus, clean-up was easy with the use of a slow cooker liner!

Day 3 Menu

Breakfast

Pecan Pancakes

More leftovers from our last RV trip! It was easy to make a double recipe of these pecan pancakes - and even easier to reheat enough for a second breakfast! Less than a minute in the microwave plus pouring syrup on top and we were ready to eat. (Other than adding chopped pecans to the batter before originally cooking them, I followed the recipe as written.)

BBQ Brisket Sliders with Macaroni and Cheese

Just a couple of days before leaving home, we joined some friends for lunch at a barbecue restaurant. Knowing that we would be on the road, we purchased some extra chopped brisket. For an easy dinner, I prepared a box of macaroni and cheese. While waiting for the water to boil, I heated the brisket and toasted some Hawaiian sweet rolls. After filling the rolls, our BBQ Brisket Sliders were ready to eat!

Once we finished eating, I mixed the remaining brisket with the macaroni and cheese for a yummy side dish for a future meal.


Day 4 Menu

Breakfast Tacos

After partially cooking some chopped potatoes and bacon in our RV microwave, we moved breakfast preparation to our outdoor picnic table. I scrambled enough eggs, water, green onion, black pepper and garlic for today's breakfast plus one more. (Since it's just the two of us, I find it so much easier to make enough food for leftovers as often as we can.)

Scott finished cooking the potatoes on the griddle before we added the egg mixture and bacon (torn into small pieces). Once everything was almost ready to eat, we warmed tortillas on the griddle. In addition to filling the tortillas with the eggs, we added shredded cheese and salsa.

Eat out at Big Island Hawaiian BBQ

We finally made it to the Phoenix suburb of Gilbert where we would be spending the next week visiting my family and, at the last minute, decided to eat out. Since the portions were huge, we had plenty for a future easy meal!

Day 5 Menu

Surprisingly, we made it all of the way to day five before having one of our "go to" breakfasts of cereal. Using disposable bowls and utensils makes clean-up quick and easy!

After enjoying another full day with family, we again decided to eat out on our way back to "RV There Yet?".

Parmesan Broiled Tilapia with Green Beans and Garlic-Parmesan Pull-Apart Loaves

With just one small oven, I had to get creative in order for everything to be ready at about the same time. I started by preparing the Garlic-Parmesan Pull-Apart Loaves, however didn't place them into the oven quite yet. Next up was preparing the Parmesan Broiled Tilapia. Other than using bottled lemon juice and dried dill, I followed the recipe as written. I broiled one side of the fish and removed it from the oven.

With the fish out of the oven, I was then able to finish the bread. When the loaves were almost fully baked, I returned the fish (cooked side down) to the broiler. I also began heating the canned green beans in the microwave. Amazingly, everything was ready to eat within minutes of each other. The entire meal was easy to prepare and very tasty.

Day 7 Menu

Breakfast

Cinnabon Cinnamon Rolls

We purchased a dozen large Cinnabon Cinnamon Rolls earlier in the year. I wrapped most of them in plastic wrap and foil so that we could freeze them and save them for later. After defrosting the cinnamon rolls overnight and heating them in the microwave in the morning, we had a breakfast treat.

Slow-Cooker Stuffed Shells with Garlic-Parmesan Pull-Apart Loaves

Just over five hours before we wanted to eat dinner, I followed the recipe for the Slow-Cooker Stuffed Shells. A few minutes before our main course was ready, I reheated some of the leftover Garlic-Parmesan Pull-Apart Bread from the previous night.

Unfortunately, we could find no way to take individual shells out of the slow cooker. Although they tasted fine, I would describe the entree as a casserole rather than stuffed shells!

Making our breakfast tacos was started by reheating the scrambled egg mixture from several days earlier. Next, we warmed tortillas (wrapped in a damp paper towel) in the microwave. Once all was hot, we filled our tortillas with eggs, shredded cheese and salsa.

For something a little different, I cut up a nectarine to add to our cereal!

Chicken Teriyaki Meatball Sliders with BBQ Macaroni & Cheese

After heating store bought chicken teriyaki meatballs in the microwave, I sliced each in half. Next, I placed the sliced meatballs on toasted Hawaiian sweet rolls. I then topped the meatballs with shredded Italian blend cheese before placing the top of the rolls on the meatballs. I served the sliders with the reheated BBQ Macaroni & Cheese that I made earlier in our trip.

Eat out at Chick-fil-a

Since we were packing up to leave in the morning, we took advantage of rewards that we earned. After a quick (and partially free) meal at Chick-fil-a, we purchased some groceries for the next leg of our journey.

S'mores with Butterfinger Peanut Butter Cups

We decided to start experimenting with s'mores. Tonight's version was made by substituting a Butterfinger Peanut Butter Cup for the chocolate bar. We stared by heating 1/2 of a S'more Marshmallow on top of 1/2 of a graham cracker in the microwave for 8-10 seconds. We topped each of them off with the candy and second half of the graham cracker. Dessert tests are almost always fun ... and yummy for the tummy!

Unexpected Successes and Failure

Reflecting back on our meals, we had two unexpected successes. Mixing the leftover chopped brisket with the macaroni and cheese for a future side dish turned out to be a winner. It reminded us of a dish we had at the Albuquerque Balloon Fiesta just one year earlier. The biggest unexpected success, however, was the super yummy trial S'more with Butterfinger Peanut Butter Cups dessert.

Topping the list on the other side has to be the "gloppy" Slow-Cooker Stuffed Shells. Although they tasted ok, since they definitely didn't look picture perfect after scooping them on to our plates, they therefore top the unexpected failure list. It's always something!
