My Aunt Jan has been so gracious this week - in addition to providing lodging and letting us drive her car all around to fulfill our love of sightseeing, she has cooked breakfast, lunch and dinner for us every day. Mom and I agreed that we wanted to give her a cooking break on our last day in Portland. Since she is a very early riser, Mom left a note on the refrigerator in an attempt to stop her cooking today.

Breakfast at Slappy Cakes
4246 SE Belmont Street; Portland, OR 97215Aunt Jan had told us about a breakfast restaurant early on during our visit, and we all decided it would be fun start to our last day, so off we headed to Slappy Cakes.
The restaurant had a pretty extensive breakfast menu, but we wanted the pancakes that they are best known for. After talking to our server, we agreed that three 8 oz. bottles of batter would be enough to fill all four of us. After much debate, we chose Buttermilk, Peanut Butter and Red Velvet (their seasonal batter in celebration of Valentine's Day ... less than a week away). In addition to the batter, we ordered strawberries, blueberries and pecans for our "fixins" along with lemon curd and a special cream cheese seasonal topping. The order came very quickly since we wanted to use the tabletop griddles to make our own breakfast.
The meal was very enjoyable (both tasty and oh so fun)! The experience has now inspired me to make pancakes when we return home to Austin - maybe even for Valentine's Day.
In addition to locations in Portland, OR and Maui, HI, the only other Slappy Cakes locations are in Japan, Malaysia, Phillippines, Singapore and Thailand.

Dinner at Skyline Restaurant
1313 NW Skyline Blvd.; Portland, Oregon 97229For dinner on our last evening in Portland, we enjoyed burgers and shakes/malts at a family diner that we drove past numerous times nearly every day of our visit - Skyline Restaurant. The menu included numerous 1/4 or 1/2 pound burger options as well as other sandwiches, soups and salads plus an assortment of breakfast and dinner entrees. Additionally, their selection of shakes and malts was among the biggest that I have ever seen and included our choices of marshmallow, white chocolate cherry and Almond Roca (the latter two were daily specials). The only downside of the restaurant was that they accepted cash only (they did have an onsite ATM)!
Founded in 1935, the restaurant was originally known as "The Speck". It was owned by three different families prior to the current owner who bought the restaurant in 1999. The restaurant's website reports that a couple whose first date was at Skyline Restaurant also celebrated their 65th anniversary at the restaurant!
