Are you looking for some fun dessert recipes for your next camping or RVing trip? If so, this article is just the answer to your search!
These ten quick and easy desserts can be prepared in either an oven, microwave, slow cooker or on top of a stove. There's even some no bake desserts perfect for those who sometimes struggle with using an RV oven (like I do!). To help make dessert baking or cooking as easy as possible, we've also included helpful hints from our experiences with following the recipes. You'll find some suggested variations with a number of the recipes where we experimented along the way.
Choosing the Best of the Best
I'd never met anyone with a whole set of sweet teeth (not just one sweet tooth) until Scott and I began dating. If there is one thing that I can count on, it is for him to give an honest review of a dessert. Because of his love for dessert, he prefers sweets that are easy to prepare (so he doesn't have a long wait) and easy to eat (cookies are a favorite - just grab and go).After being on the road for six weeks, Scott picked his favorites from our long list of dessert recipes. To come up with our final ranking, the distinction was often how long dessert took to prepare. Exceptions were made for recipes that made multiple servings as only the first night required a wait!

10. Sweet and Salty Trail Mix
Homemade Sweet & Salty Trail Mix is one of our favorites. You may wonder, if we like it so much, why we ranked it at number ten? There's one reason (and only one) for its ranking - we enjoy these concoctions more as an afternoon snack than as an evening dessert!What goes into Sweet and Salty Trail Mix? Whatever "sweet" and "salty" munchies that you have on hand ... or want to buy to throw into the mixture. Here's some ideas for the salty part of the equation (although we've listed many "name brand" items, in our opinion, generics work just as well):
- any flavor of Chex Mix;
- Cheerios;
- cheese snacks;
- Corn, Rice and/or Wheat Chex;
- corn chips;
- mini pretzel twists or sticks;
- nuts; and
- popcorn.
Sweet items can include:
- animal crackers;
- chocolate chips, peanut butter chips or any other favorite;
- Cinnamon Toast Crisp;
- Froot Loops;
- marshmallows;
- M & M's;
- raisins;
- Reese's Minis;
- Reese's Pieces;
- Teddy Grahams; and
- yogurt covered pretzels.
There is no magic recipe. We tend to mix 4 - 5 salty ingredients with 1 or 2 sweet ones, but anything goes. When it comes to chocolates, our preference is coated candies as they won't melt as easily in the heat.
There are plenty of recipes that you can find online, however most require mixing some sort of coating and baking the trail mix in an oven. We prefer to take the easy route while RVing! Pour your chosen ingredients into any large container with a lid until it's about 3/4 full. Seal the container and shake to mix everything.

9. Chocolate Thin Mint Cookie Obsession
10 Minute Chocolate Thin Mint Cookie Obsession DessertSince dessert was just for the two of us, I divided all ingredients in the recipe for Chocolate Thin Mint Cookie Obsession by 3. Other than just breaking (not crushing) the cookies, I followed the recipe as written. (I did choose the "no butter" option.)
The dessert was pretty rich, but relatively easy to make - even without a mixer!

8. Microwave S'mores
There are times when S'mores sound great, but we don't want to devote the time and effort needed for a campfire. I recently bought S'MoreMallows, and noticed a recipe for Microwave S'mores on the package. We decided to try them out, and have never looked back!Just like the traditional recipe, ingredients include graham crackers, chocolate bars and marshmallows. Heat the marshmallow on top of 1/2 of a graham cracker for 8 seconds. Place the chocolate and remaining graham cracker half on top, and it is ready to devour. (Scott enjoys the recipe as written, however I tend to nuke my marshmallows for a little longer than the recommended time.)
Since making our first "indoor S'more", we've gone crazy! We've substituted Oreo Chocolate Candy, Reese's Peanut Butter Cups and Butterfinger Cups for the chocolate . . . so far. No telling what we will try next!
If you've never bought S'MoreMallows, you haven't missed anything. I was excited that there was a marshmallow perfectly designed for S'mores. Once I opened the package and read the instructions, I realized that you are supposed to cut each marshmallow in half. What? Really? Why would a company make and market a marshmallow for a specific recipe when the marshmallow is not even the correct size for the recipe?

7. Strawberry Shortcake
During berry season, Strawberry Shortcake is a quick and tasty way to end your day. Short on time? Just slice or chop/dice some strawberries. Place the cut berries on dessert shells and top with whipped topping.Have a little more time? Cut your strawberries as desired, sprinkle them with some sugar and stir to coat the berries. Refrigerate for at least 20 minutes before assembling your desserts.
There's plenty of other options to spice up this long time favorite. Add bananas or other berries for even more flavor. Strawberries not your thing? Use cherries, blueberries, raspberries or blackberries instead.

6. Pudding Parfaits
With instant pudding mix, milk and treats for layering, Pudding Parfaits are a quick, easy and fun dessert. The possibilities are endless - choose your flavor of pudding, favorite cookies, fresh fruits, whipped topping and/or other "mix- ins" to layer in the parfait.Most instant puddings only take about ten minutes to set, so dessert can be ready in a flash!

5. Fruit Crisp with Ice Cream
Crock Pot Razzleberry CrispI typically bring along the pre-measured dry ingredients (brown sugar, flour and oats) in a ziplock bag. All that's needed to get the Fruit Crisp cooking is to line the slow cooker and empty a can of pie filling into the pot. After cutting the butter into the dry ingredients and sprinkling the mixture on the pie filling, turn on the slow cooker and dessert will be ready in about four hours.
We've made this numerous times over the past couple of years and it has always been good - especially when served with ice cream! We've used apple, blueberry and caramel apple pie fillings multiple times each, and will likely try some others in the future.

4. Chocolate Peanut Butter No Bake Cookies
Chocolate Peanut Butter No Bake Cookie RecipeWe both love the combination of chocolate and peanut butter, so we had to give the Chocolate Peanut Butter No Bake Cookie recipe a try! (I typically travel with all of the required ingredients except for coconut oil, so I just had to remember to bring some along.) I followed the recipe as written and the cookies were easy and excellent. Next time I make these, I will double the recipe!
3. Rolo Pretzel Delights
Rolo Pretzel DelightsHere's another super easy dessert recipe for anyone who craves the combination of sweet and salty. I make Rolo Pretzel Delights with either pretzel twists or snaps as a base. After cooking in the oven, I top them with another pretzel, m & m's or a pecan halve. These are addicting!

2. White Chocolate Crockpot Candy
White Chocolate Crockpot CandySince stumbling across this recipe several years back, I can't even count the number of times that I've made White Chocolate Crockpot Candy. I follow the recipe as written with one minor substitution - we actually prefer regular dry roasted salted peanuts (vs. honey roasted). I do always use a crockpot liner as well as silicon baking mats for cooling the candy.
As written, the recipe makes dozens of candy clusters. That's okay for us as they save well in a ziplock bag and we somehow manage to eventually eat every last one! I decorate the candy based on the time of year - Valentine's Day, St. Patrick's Day, Easter, Independence Day, Halloween, Christmas, etc.
