Breakfast Tacos: The Ultimate Camping Breakfast

Start by crisping pre-cooked bacon in the microwave while dicing a potato. Partially cook the diced potatoes in the microwave to soften them. Mix eggs, water, crumbled bacon, chopped onion, diced potatoes and spices to taste. Cook egg mixture on a griddle and heat tortillas just before the eggs are fully cooked. Scoop the eggs into tortillas and add shredded cheese and salsa before devouring yummy breakfast tacos!

One of ours is breakfast tacos - especially when we are camping! It's funny, we rarely cook a hot breakfast when we are at home, but when we are out and about in our RV, we do it quite regularly.
