In Old Road Town, St. Kitts located near Romney Manor, there's historical structures known as Wingfield Estate. Just over ten years ago during the ongoing archaeological digs, a rum distillery that had been buried for years was discovered. It has since been proven that the distillery is the Caribbean's oldest intact distillery found to date - it was distilling in 1681 (or maybe even earlier).
